Healthy Hearty Snack Balls
Ingredients
- 1/2 cup dark chocolate chips
- 2/3 cup nut butter (almond butter is my favorite)
- 5 TBSP real maple syrup or honey or 2-3 TBSP Agave
- 1/2 cup ground flax or chia seeds
- a little coconut oil if needed to add extra moisture
- 1/2 cup unsweetened coconut shreds
Instructions
- Mix all ingredients in a bowl except for the shredded coconut
- Form ~12 balls with clean hands
- Roll in coconut to coat (may need to grip w hands to make coconut stick)
- Refrigerate up to a week and eat or freeze to make last longer
Options:
- press in 8x8 pan, chill and cut into 1’ squares instead of rolling balls
- chunky nut butters instead of smooth
- cacao nibs as part of chocolate chips
- cacao powder mixed in or coated (can be messy but very tasty)
- can mix coconut into balls instead of coating
- touch of organic instant coffee
- organic dried cranberries, cherries or raisins
- organic chopped nuts
- sprinkle of himalayan sea salt
- whatever else you can imagine
