Healthy Hearty Snack Balls

Ingredients

  • 1/2 cup dark chocolate chips
  • 2/3 cup nut butter (almond butter is my favorite)
  • 5 TBSP real maple syrup or honey or 2-3 TBSP Agave
  • 1/2 cup ground flax or chia seeds
  • a little coconut oil if needed to add extra moisture
  • 1/2 cup unsweetened coconut shreds

Instructions

  • Mix all ingredients in a bowl except for the shredded coconut
  • Form ~12 balls with clean hands
  • Roll in coconut to coat (may need to grip w hands to make coconut stick)
  • Refrigerate up to a week and eat or freeze to make last longer

Options:

  • press in 8x8 pan, chill and cut into 1’ squares instead of rolling balls
  • chunky nut butters instead of smooth
  • cacao nibs as part of chocolate chips
  • cacao powder mixed in or coated (can be messy but very tasty)
  • can mix coconut into balls instead of coating
  • touch of organic instant coffee
  • organic dried cranberries, cherries or raisins
  • organic chopped nuts
  • sprinkle of himalayan sea salt
  • whatever else you can imagine
